Winter squashes are delicious when baked or steamed and very nutritious. During the Autumn months, the Vata dosha (cold, dry. light, and mobile) can become out of balance. Pumpkins and winter squashes (butternut, acorn, spaghetti, and kabocha) are abundant and balance this dosha and time of year because they create stability with sweetness, heaviness, and wetness. Their seeds are balanced for all three doshas.
Note- each type of winter squash or pumpkin are different shapes and sizes. They must be cut into uniform pieces, ensuring they cook uniformly. The exception to this rule is Acorn squashes whose skins are edible after roasting.
