The Winter Apple Dessert is healthy and very simple to make. It has the perfect energetics to balance the doshas during the cooler fall and winter seasons, bringing warmth and spiciness. The sweetener of choice is Jaggery (Indian palm sugar), which is warming, but maple syrup is also a great alternative.

Equptiment Needed:
Knife, cutting board, and medium size pot
Ingredients:
2 each Apples (I like Fuji)
1 Tablespoon Raisins
2 each Apricots, dried
1 each lemon, juiced
1/8 teaspoon Cardamom powder
1/4 teaspoon Cinnamon powder
1/8 teaspoon Ginger powder
1 Tablespoon Ghee
1-2 teaspoons Jaggery or maple syrup (optional)
1 Tablespoon Almonds, chopped (optional)
To taste Mineral salt
1/4-1/3 cup of hot water for soaking the dried fruits
Directions:
1. Cut the apricots into 1/4" dice, measure the raisins, and place them in a bowl.t water overnight. Drain the Soak them in ho fruit the following day and reserve the water.
2. Juice the lemon and set aside.
3. Peel the apples, remove the core, and cut them into ½” pieces (as even as possible). Toss in a bit of lemon juice and set aside.
2. Melt the ghee, add the cardamom, cinnamon, and ginger, and incorporate. Then, add the apples, toss, and coat with ghee.

4. Add the liquid reserved from the dried fruits, bring to a simmer, and cook for 10 minutes, stirring as needed.
