Paneer cheese is a traditional Indian cheese made by coagulating milk with vinegar or citrus juice instead of animal rennet. It is considered easy to digest, high in protein a, and Sattvic (pure). This recipe is made with low-fat (2%) milk but can be made with any milk.
Milk has the energetics of having a sweet taste, cooling energy, and sweet aftertaste, making it anabolic or building in the body. Milk and most dairy products are considered balancing for the Vata and Pitta doshas. Its heavy, wet, and cold nature can aggravate and increase the Kapha dosha.
