Ayurvedic Hummus & Tahini


Hummus

This Ayurvedic Hummus & Tahini recipe has been modified by removing garlic. In Ayurvedic thought, garlic is Rajasic, meaning it brings about excess stimulation that can interfere with digestion and overstimulate your mind. In its place, we’ve added digestive spices that increase Agni (digestive fire). You can try many different spices, including fenugreek, sumac, and/or Hing (asafoetida). You can buy cooked garbanzo beans or cook them yourself.



Equipment Needed

Large pot

Colander and bowl for draining

Food processor

Rubber spatula

Tahini

Yield 1- 1/4 cups

Tahini

Tahini is a condiment made from toasted ground hulled sesame seeds. It is served by itself or as a major ingredient in hummus, baba ghanoush, and halva. Tahini is traditionally used in many cuisines in the Mediterranean region. Although you can buy premade tahini at many grocery stores, below is a simple recipe for homemade.

Equipment needed

Food processor or bullet grinder

Sauté pan for toasting seeds

Rubber spatula
